Meat science, markets and the people who feed us.

I’ve spent more than two decades working across the meat and food industry — from production and processing to sales, markets, strategy, education and innovation. That experience shapes how I think about the challenges facing animal agriculture and the broader food system.

Good food conversations require good science — but they also require understanding economics, people and the realities of producing food at scale.

Brian Brozovic with a colleague in a commercial food processing kitchen at a trade show.

The whole system matters.

Food doesn’t begin at the grocery store, and the challenges facing agriculture rarely belong to just one part of the supply chain. Understanding what happens from production through processing, markets and the consumer changes the conversation.

Meat Science & Processing

Product quality, yield, food safety, formulation and processing decisions ultimately meet at the consumer’s plate. My foundation in meat science keeps the conversation grounded in what actually happens to the product.

Markets & Strategy

Cattle and meat markets, raw-material costs, supply constraints and consumer demand all shape business decisions. I’m interested in translating those signals into practical strategy rather than simply reporting the numbers.

Innovation & Biotechnology

New technologies — from processing innovation to cultivated meat and other emerging food systems — deserve serious evaluation rather than reflexive enthusiasm or rejection. The useful questions are scientific, economic, ethical and practical.

Agriculture & Public Policy

Trade, regulation, the Farm Bill and political decisions can reshape markets far beyond Washington, D.C. I focus on what those decisions mean for producers, processors, workers, consumers and rural communities.

From the plant floor to the strategy table.

My work has crossed enough parts of the food system that I tend to see connections between problems that are often treated separately.

Industry & Operations

Processing, product development, market positioning, sales, supply chains and the practical realities of turning raw materials into products people want to buy.

Education & Communication

Translating technical and market complexity for industry audiences, students, policymakers, journalists and consumers — without pretending complicated questions have simple answers.

Advisory & Strategy

Helping processors, producers and food businesses think through markets, opportunities, commercialization, differentiation and the decisions that connect an idea to implementation.

The conversations shaping food.

Some of the most important questions facing food and agriculture sit beyond the boundaries of any single discipline. Science matters. So do economics, ethics, policy, culture and the people who ultimately have to live with the decisions we make.

Technology & the Future of Food

Biotechnology, cultivated meat, automation and emerging production systems raise legitimate questions about science, economics, regulation, ethics and consumer acceptance. I’m interested in asking those questions without requiring the answer to be either “innovation will save us” or “new is bad.”

Animals, Resources & Responsibility

Conversations about animal agriculture increasingly involve welfare, land, water, climate and the ethics of producing animals for food. Those conversations deserve more than slogans from either side. They require evidence, context and a willingness to wrestle with tradeoffs.

Public Trust & the Politics of Food

Food becomes political quickly. Trade policy, regulation, dietary guidance and agricultural policy affect real businesses, communities and families. I’m interested in separating legitimate policy debate from political theater — and understanding what happens downstream when decisions are made upstream.

And sometimes the question is theological.

Food is also about creation, hunger, abundance, stewardship, sacrifice, hospitality and neighbor. My work in Food Theology asks what faith traditions can contribute to conversations about agriculture, biotechnology, animal ethics and the way we eat.

Analysis from inside the industry.

I write about the meat business from the perspective of someone who has worked inside it — following markets, processing, policy, innovation and the decisions shaping the future of animal agriculture.

Markets & Meat Industry

Beef and livestock markets, processor economics, supply, demand and the forces moving prices.

Agriculture & Policy

Trade, the Farm Bill, regulation and the consequences of treating agriculture as political theater.

Science, Innovation & Ethics

Meat science, biotechnology, cultivated meat, sustainability, animal ethics and the future of food.

Better food conversations start with better questions.

Whether the conversation is about markets, processing, biotechnology, policy or the future of animal agriculture, I’m interested in work that replaces easy answers with useful ones.
